Our pork’s are farming in the outdoor area the entire year. We just use cereals and legumes based feeds integrated with chestnuts, acorns and other natural supplies; antibiotics are not used.
From a Growing Passion
Our black pork farming was born 3 years ago in Borgata San Grato at San Damiano d’Asti because of Enrica’s husband passion for his agricultural and rural activity.
Thank’s to Teo Costa, a wine producer from Castellinaldo with over 10 years passed to rebuild the black pork breed, all of this has been possible and achieving, on January 23 of the last year, the certification of “PIEDMONT BLACK PORK” as a new breed type.
The Black pork main characteristics are: black cloak and grey skin, white legs and facial mask and his is very robust.
The animals are breeds under semi-free range conditions, that’s what marks the unicity and the highest quality level of this meat.
Our family Butcher ( Salumeria Lorenzato Marco – loc. Perosini Antignano At), realize for us a large varieties of cold cuts with their specific artisan techniques: SALAME CRUDO – SALAME COTTO – LARDO – PANCETTA – COTECHINO .
Each high-quality product with his specific, intense and aromatic flavour is made by their artisan expert touch during all the preparation steps, from the spiciness one until the end of the seasoning period, that can be longer or shorter depending on each type of cold cuts.
